Christmas bacon, prunes & sausages are possibly the best part of the Christmas meal. Salty streaky bacon wrapped round a juicy fruity prune and a little sausage. This trio is then roasted until the bacon is crispy the prune tacky and the sausage beautifully done. Even better these Christmas bacon, prunes and sausages can be made ahead of time and then frozen. Ensuring you are all ready for the Christmas meal when the day comes with these little delicious meaty, fruity mouthfuls.
Pigs in blankets are little sausages which are then wrapped in streaky bacon. Devils on horseback are prunes wrapped in streaky bacon. Some in our family like pigs in blankets, some like devils on horseback. I like a Devil pig on horseback, by which I mean a small sausage with a prune wrapped together in bacon. I make a mixture of these little treats, so pleasing everyone, and serve them with the Christmas meal. Some serve prunes wrapped in bacon as canapes and I would never say no to that, just as long as there are some left to be served with the Christmas meal itself. For perfection, I also like to have a few left over for sandwiches but for the Christmas meal I work on the basis of 3-4 per person.
You can freeze them in the baking tray or just in a few layers of cling film. They can be cooked while you roast the potatoes.

Ingredients
- 28 small sausages
- 140g/5oz or 28 prunes
- 300g/10½oz or 7 slices streaky bacon
Instructions
- Wrap a 3 inch x 1 inch piece of streaky bacon around a sausage and/or prune.
- Repeat until all the streaky bacon is used up. Place the wrapped little goodies tightly next to each other and this will ensure they don’t unwrap.
- To freeze, wrap in two layers cling film. On Christmas Eve I leave them at room temperature overnight and then put them in a roasting tin and pop them in the fridge. You could defrost them for longer in the fridge if you prefer. Bring them out of the fridge on Christmas morning for about an hour to reach room temperature before cooking them.
- When ready to cook, place in a preheated oven at 200C/180C fan /400F/Gas mark 6. Cook for 30 minutes until crispy.
